Coconut candy happens to be a very healthy, crunchy and delicious snack. Most Nigerians love, eat and buy them often. It is quite easy to make and can be commercialized. lets make some sweet snack together.
Ingredients
One medium sized coconut
220g of powdered sugar
water
STEP-BY-STEP
- Break your coconut, save the juice for later.
- Collect the fleshy parts and grate using a grater. Try to have very long strands.
- Slowly add the coconut juice into the pot, add the sugar and stir.
- Now add your grated coconut and keep stirring.
- Add water to the same level as the grated coconut; cover the pot and allow to boil at high heat.
- As soon as your mixture starts boiling, stir continuously till the water dries up entirely.
- reduce your heat level and continue stirring; stir until the sugar color turns brown and looks like honey and the grated coconuts start sticking together.
- continue stirring till the coconut pieces turns slightly brown.
- Turn off your heat source and scoop the very hot coconut candy onto any plate and leave to cool The coconut candy should stick together when cold.
- Ready to eat and can be refrigerated.
